Kaga-bocha is a type of hojicha tea that has long been popular in Ishikawa Prefecture. While hojicha is generally made by roasting tea leaves, Kaga stick tea is made from tea stems, which gives it an elegant aroma and a clean, refreshing taste with little astringency.

During the Edo period (1603-1868), the Kaga clan widely promoted the tea ceremony, and tea production flourished. Tea production also flourished. Using only first-grade green tea, the stick tea is carefully roasted using far-infrared rays, and is well known for its refreshing and easy-to-drink taste. This hojicha specialty store is under the direct management of Maruhachi Tea Factory, which was founded in 1863. The store is named after Kosugi Issho, a representative haiku poet of the Kaga clan during the Genroku period (1688-1704). At the cafe, visitors can enjoy a monthly selection of carefully selected varieties of hojicha, including the signature product, "Kaga stick tea. There are always three varieties of tea available, which are selected by pouring hot water over the tea leaves and sampling the aroma. By using all five senses to experience the tea, you can find the Japanese tea you prefer. You can also choose your favorite seasonal sweets to go with the tea from several varieties. Artists' vessels selected for each customer are also an enjoyable part of the experience.

A long-established teahouse established in 1859. The café has been in operation since 1985. It is one of the pioneers of Japanese tea cafes in Kanazawa. Kaga Bocha uses only the first tea stems and roasts its own tea.

The signature item on the menu, the "Dusty Kaga Bocha Parfait," is an all-out Kaga Bocha tea parfait, including soft-serve ice cream made with homemade Bocha tea powder and jellied Bocha tea that has a concentrated Bocha tea flavor. After much trial and error, the powder is made coarser to maximize the aroma. The flavor changes as you eat it, and the aftertaste is refreshing.
