What is Jingisukan?
Jingisukan is a representative soul food of Hokkaido and is eaten on various occasions. It is a dish in which vegetables such as bean sprouts and onions are spread around a uniquely shaped pot, and lamb is boldly placed in the center of the pot and grilled. The juices from the lamb gradually seep into the vegetables, allowing the guests to enjoy the flavor of both the meat and the vegetables. The sauce, which was developed to make lamb tasty, has its own unique flavor depending on the region and the restaurant.
Lamb meat comes in two types: lamb (meat from lambs less than one year old) and mutton (meat from adult lambs over one year old). Lamb is light and easy to eat, while mutton has a matured aroma and flavor. There are two types of Jingisukan: "post-done Jingisukan," in which sauce is added after the lamb is cooked, and "seasoned Jingisukan," in which the meat is seasoned from the start, and post-done is said to be the most popular in Sapporo.
In Hokkaido, sheep breeding farms were set up in Tsukisamu and Takikawa in Sapporo City during the Taisho Era (1912-1926) for self-sufficiency in wool for military use. After the war, however, the demand for sheep decreased, and as an effective use of the overabundance of sheep, Jingisukan (mutton) became popular. It is believed that the method of eating roasted meat dipped in sauce was adopted at the Tsukisamu Sheep Farm, which spread to Sapporo City and "post-dipped Jingisukan" became the mainstream.

A place where you can enjoy Jingisukan while feeling the beauty of nature from season to season.
Founded in 1953, this restaurant in the suburbs of Sapporo offers jingisukan while enjoying the rich nature of each season, serving carefully selected mutton rather than lamb. The restaurant is also the originator of the "Tsukisamu style" of Jingisukan, and is truly a legend of Hokkaido's Jingisukan.
The mutton is grilled over a charcoal fire in a shichirin (charcoal griddle), with the heat adjusted one by one, to give the mutton its original rich and delicious flavor. The small rice balls are also popular as delicious grilled rice balls.
The lodge-style restaurant offers a relaxing atmosphere.
You can enjoy Genghis Khan on the open terrace where you can see the beautiful fresh green of white birch trees in summer and the silver world in winter. After dinner, a walk from the terrace through the pathway to the green grounds is a great feeling. 3Jingisukan Yoshitsune
A famous restaurant with a 60-year history that continues to preserve the flavors loved by the locals.
Not far from Sapporo Station, the restaurant is marked by a large red lantern. The lamb shabu shabu, which is lamb sliced just before it is served in an earthenware pot with kombu dashi broth, has an excellent, refreshing flavor. The secret to the delicious taste is to just dip the lamb in the boiling broth and pull it out immediately.
The homemade sauce is refreshing and slightly spicy compared to ponzu (Japanese sauce made from ponzu citrus juice), and it enhances the flavor of the lamb meat. To finish off the shabu-shabu, we recommend ordering ramen separately and adding pepper and green onion to the ramen, which is full of the flavor of the lamb.

Located in the Raccoon Shoji Arcade, this restaurant specializes in Hokkaido-produced Suffolk lamb. Suffolk lamb is the highest grade of lamb native to Suffolk, England. The restaurant buys a whole lamb and cooks it, so you can taste various parts of the meat. The rare Suffolk lamb produced in Hokkaido, including sheep from Shibetsu on the company's own farm, is characterized by its tender meat and tasty fat. It has a reputation for being easy to eat with little odor.
The best way to cook the lamb is medium rare. There are two types of homemade sauce: a refreshing ponzu (Japanese citrus juice) sauce and a slightly sweet kelp and soy sauce based sauce, both of which have a great taste.
