Myojinmaru started out as the restaurant division of Myojin Suisan, a fisheries company that has been number one in Japan for 11 consecutive years for its catch of skipjack tuna caught in coastal waters. Currently, the company has five restaurants in Kochi Prefecture, serving bonito caught by the traditional Tosa method of fishing with a single pole, as well as tataki and sashimi.

Their signature dish, "Bonito Tataki," is a savory dish grilled over a straw flame at 800 to 1,000 degrees Celsius, concentrating the flavor of the bonito. The "yaki-kiri" method, in which the fish is served fresh from the straw and slightly warm, is also a special feature of the restaurant. Myojinmaru is the originator of "shio-tataki," which has spread throughout Japan as a standard way to eat bonito. The natural salt from Kuroshio-cho, Kochi Prefecture, brings out the flavor of the bonito.

The bonito used in their dishes is carefully selected from among fresh bonito caught by hand and weighing 2.5 to 3.5 kilograms with good meat quality and fat content.
