1Kamezushi
Enjoy seasonal local fish that the owner connoisseurs.
This long-established sushi restaurant in Yamashiro Onsen was selected as a Bib Gourmand in the Michelin Guide Toyama/Ishikawa (Kanazawa) in 2016. Currently, the second generation of the family stands at the restaurant, and he visits the local Hashidate Port, as well as Kanazawa Port, Noto, Himi, and other fishing ports, to purchase mainly seafood that he carefully selects himself.
Nigiri is only available on an omakase basis, and the appeal is that you can enjoy Hokuriku seafood such as bai clam, gas shrimp, and amaebi (sweet shrimp). For rice, Koshihikari rice grown in the mountains of Kaga is used; soy sauce, salt, and vinegar are also locally produced; and Kutani ware is also used for the dishes, offering sushi that can only be enjoyed in Kaga.

The interior of the restaurant, which was renovated from an old private house, has a modern Japanese style, and the background jazz music invites a comfortable atmosphere. During the day, the restaurant is open by reservation only and is limited to a small group of three, and single customers are also welcome.
At night, too, the counter is a special place for solo customers, and a conversation with the soft-spoken owner makes for an enjoyable time. There is also a tatami room where families and groups can dine in comfort. In winter, crab dishes are also a specialty, with snow crab available from early November to mid-March and Kabako crab from early November to January. Fans visit from all over Japan every year, so early reservations are a must.

Omotenashi Italian cuisine with a bowl of Kabako crab
A creative Italian restaurant using local ingredients. It is also famous for its "Kaga Crab Gohan," a local delicacy recommended by Kaga City, and offers crab dishes in an Italian setting.
The main dish of "Kaga Crab Gohan" is a bouillabaisse with crab meat and roe (roe inside the shell), clams, mussels, and vegetables. The risotto, cooked in crab broth, is filled with crab roe (roe in the abdomen) and cheese, which is mixed with hot spring eggs for a mellower taste. Five small dishes and dessert are also included. Quantities are limited, so reservations two weeks to one month in advance are recommended.
A Restaurant that can also be used as a Cafe
The name of the restaurant means "a place that makes you happy" in Italian. You can experience this meaning through the food in a house surrounded by greenery. The vegetables used in the restaurant are organic and home-grown, with more than 50 varieties available each year. The menu features dishes that incorporate local ingredients, such as risotto made with Italian rice from Nomi City and homemade noodles.
In addition to the Kaga Crab Gohan, pasta sets are available for lunch, and the café is open from 1:30 p.m. to 3:30 p.m., so it is recommended to enjoy tea time directly after your meal.

A diner under the direct management of a fresh fish store where you can enjoy fresh fish at a reasonable price.
Dining Area attached to Ueda Fresh Fish Restaurant. With the motto of "good fish at a reasonable price for local people," set menus and rice bowls using seasonal fish can be enjoyed at reasonable prices during lunch time. The menu changes depending on the day's purchases, so you will have to wait until you visit to find out what the menu offers. The menu, which is directly managed by a fresh fish restaurant, is popular for dishes such as the "Tuna Nakadori Set Meal," a limited-quantity tuna set meal in which you have to scoop the meat out of the tuna's backbone by yourself. Fried foods such as fried horse mackerel and deep-fried grouper are also made from fresh sashimi fish, which gives them a plump and juicy texture that is addictive.
Uncompromising style, open only on days when good fish are available
The owner says, "I want the locals to be happy, so I only open the restaurant when there is a good catch. If there is a bad catch, or if he is unable to purchase fish he is satisfied with, he may take several days off, but on the days he is open, he treats his customers with the best fish. The restaurant has a spacious tatami room where families can relax and a counter where one can dine alone. The restaurant is often closed the day after stormy weather because they cannot bring in fish even if the weather is fine. Please call the restaurant on the day of your visit to confirm.

An at-home diner frequented by locals. The owner is in charge of Italian cuisine and his wife is in charge of Japanese cuisine. At lunch time, two types of lunches are available, which change every two weeks. The Japanese set meal prepared by the wife is a healthy dish consisting of nine small potted dishes using local seasonal vegetables, cereal rice, and miso soup, and is popular among women. The pasta lunch prepared by the owner comes with a choice of pasta, homemade focaccia, salad, and hors d'oeuvres.

Located about a 20-minute walk from downtown Yamashiro Onsen, the restaurant is marked by a large garage. Inside the restaurant, in addition to the main dining room, there is a glass-walled sunroom where you can enjoy a meal in an open atmosphere.
