Oshi-zushi has long been popular in Kanazawa for special occasions such as festivals, etc. Established in 1958, this store has been making oshi-zushi using rice from contract farmers, Hakusan subsoil water, fresh fish that has been cured with mild special vinegar and natural salt, and wrapped in aromatic bamboo leaves.
Kanazawa Sasa Sushi Premium, which was renewed in the spring of 2019, was created by pursuing the deliciousness of the ingredients. The colorful sushi is made from fluffy sushi rice cooked with rice produced in Ishikawa and topped with five different ingredients, including "Noto Beef Shigure" seasoned with local Ono soy sauce, "Japanese Sea Bream" made from sea bream from the Seto Inland Sea and tied with kombu, and "Seared Yellowtail" marinated in malted rice overnight for a flavorful finish. The individually wrapped packages make it easy to eat and give as a souvenir.

Freshly cooked flavorful seafood rice
Abalone rice" and "Nodoguro rice" are offered only at Kanazawa Station Hyakubangai, a store famous for its "Buri no Tataki" (Yellowtail Tataki). Both bento boxes are handmade in the back of the shop, starting with grinding Koshihikari rice produced in Ishikawa Prefecture, and when the rice is cooked, the whole area is filled with a delicious aroma.
The "Abalone Meshi" is made with abundant domestic abalone, mainly from Noto, and the secret ingredient is "ishiru," Noto's fish sauce made by fermenting squid, which gives it a flavor that you will never get tired of. The texture of the abalone is also excellent. Nodoguromeshi" is a luxurious dish cooked with fried tofu and carrots in nodoguro (sea bream) broth. The seasoning is delicious not only when freshly made but also when cold. It is often sold out in the evening, so call to have one reserved for you.

37th Gyoza no Ten "White Gyoza", "Yaki Gyoza
Comparison of two unique gyoza dumplings
This famous gyoza restaurant is always packed any time of the day, and there is always a long line for lunch and dinner. The founder of the main "White Gyoza" restaurant in Chiba Prefecture has recreated the gyoza he learned in China. 20 minutes of slow-frying gives the thick skin a fluffy, bread-like texture, and the inside is filled with finely chopped cabbage, chives, and minced pork.
On the other hand, the original "Yaki Gyoza" from "No.7 Gyoza no Ten" is made with ground pork and beef, cabbage, and onion, wrapped in a skin and baked, giving it a crispy, crunchy texture and a juicy flavor. The two types of gyoza, which differ in everything from the ingredients for the skin and red bean paste to the formula and baking method, are a must-try to compare. It takes time for the gyoza to be baked, so reservations are recommended for takeout.

Exquisite rice balls made with ingredients typical of Kanazawa
This unpretentious onigiri restaurant was opened by the owner, who spent 35 years working at ryotei restaurants in Kanazawa and Tokyo. The rice balls are made with rice grown in Noto, cooked in a rice cooker, and served with Mongolian rock salt and Ariake laver. The onigiri are made with more than 40 different ingredients, most of which are homemade, including Kaga lotus root kinpira, squid blackening, Noto shiitake mushrooms, and fugu nuka, a flavor unique to Kanazawa.
Also noteworthy are the seasonal rice balls, such as "Okoge", which is available only in limited quantities and allows you to enjoy the simple taste of rice, "Hamo no ume plum paste" in summer, and "Gohan chestnut rice" in autumn. It is also nice that all the rice balls are made after the order is placed. Set menus with side dishes are also available for takeout.
