1What is Genghis Khan in Hokkaido?

Founded in Obihiro in 1959, the company now has six restaurants in the Tokachi area and three in Sapporo. The most popular menu item is Jingisukan, but this is a Yakiniku Restaurant. Instead of Jingisukan pots, Jingisukan and other meats are served together in a roaster for barbequed meat.

In addition to regular mutton and lamb, this jingisukan specialty restaurant offers "King Mutton" and "King Lamb," which are rare raw shoulder loin meat, only about 500g of which can be obtained from a single sheep. The meat is purchased fresh and cured slowly until the flavor is enhanced. Compared to ordinary mutton or lamb, the tenderness and flavor of the "King" meat is noticeably different.

This restaurant specializes in Horujin, which is a dish of beef hormone, Genghis Khan, and vegetables such as bean sprouts, onions, and green peppers served boldly on a teppan. The jingisukan and pork guts (stomach) are seasoned with soy sauce sauce and then grilled while gradually dipping them in a special miso sauce. The key to the flavor is the miso sauce, which is made from a secret recipe of white miso paste that is slowly simmered until it becomes the color of red miso paste. It is recommended to add udon noodles when the meat is half cooked. When the onions are tender, it is time to eat.
