The specialty is the tempura, which is fried so hard you can hear the zaku-zaku sound. The "Tokujo-Tendon" (extra large bowl of tempura rice topped with tempura shrimp and vegetables) is served on top of a bowl of rice and is served with the original sweet and salty soy sauce sauce that the owner of the restaurant insisted on. The sea bream is landed at the port of Kamae and immediately released into the fish pond, giving it an irresistibly firm texture. The dipping sauce, which is a combination of Oita Prefecture soy sauce and soup stock made from dried bonito flakes and kelp, is superb and light on the palate.
Another specialty, "Ankake Yakisoba" (fried noodles with starchy sauce), is served in a heaping pile on a plate larger than a person's face. You can choose between thin noodles that stay crispy until the end, or thick noodles that are crispy at first but become firm and elastic over time. With plenty of vegetables and a chicken broth-based sauce, the dish is lighter than you might imagine.
