Many local fans. Popular Beppu cold noodle specialty restaurant.
One of Beppu's most popular cold noodle restaurants. The main restaurant opened in 2001, and the Tokiwa Beppu branch opened in 2019. The soup, made with thick leaf kelp and Rausu kelp from Kushiro, Hokkaido, is refreshing yet full of flavor and a good aroma. The fat is carefully removed and the soup is clear and beautiful, making you want to gulp it down to the last drop.
The noodles are made from an original blend of high-quality wheat flour, buckwheat flour, and starch, which was perfected through a process of trial and error. Compared to other restaurants, there is more buckwheat flour, and the color of the noodles is similar to that of soba noodles. The noodles are firm, elastic, and have an excellent texture.
Chewy beef chashu pork has an addictive taste!
Another key point is the Japanese beef shank chashu pork. The beef is braised well and the flavor spreads as you bite into it, matching the soup. The crisp cabbage kimchi has a strong sour and spicy flavor, and it brings out the flavor of the whole cold noodle soup.
The owner dares not to add vinegar or other spices because he wants you to enjoy the flavor of the noodle as it is. Some customers even take a portion of kimchi first and eat it while changing the flavor little by little. A long-established restaurant for cold noodles in Beppu, this popular restaurant was established in 1970, but closed once in 2017. However, a regular customer became the successor, saying, "I can't stand to lose my delicious cold noodles," and in February of the following year, the restaurant was revived and reopened for business. The restaurant has kept the taste of its predecessor, serving Beppu cold noodle without changing the recipe or flavor.
The restaurant features thick noodles with a powerful firmness. The noodles are made from buckwheat and wheat flours and kneaded by hand in the restaurant, and many people are shocked when they try them for the first time.
Light Japanese-style soup that can be drunk in large gulps is a must-try!
The noodles are complemented by a light soy sauce-based soup. The soup is clean and clear. The cabbage kimchi is mild and slightly less sour and spicy than at other restaurants. The sweetness of the cabbage can be felt and adds a nice accent to the overall dish. The jerky-like flavor of the beef chashu pork is salty and goes well with the soup.
A wide variety of cold and hot noodles are available. The "chashu cold noodle" with so much meat on top that you can hardly see the noodles is very popular and is said to sell out quickly.
