The fat is carefully removed and the soup is clear and beautiful, making you want to gulp it down to the last drop.
The noodles are made from an original blend of high-quality wheat flour, buckwheat flour, and starch, which was perfected through a process of trial and error. Compared to other restaurants, there is more buckwheat flour, and the color of the noodles is similar to that of soba noodles. The noodles are firm, elastic, and have an excellent texture.

The restaurant has kept the taste of its predecessor, serving Beppu cold noodle without changing the recipe or flavor.
The restaurant features thick noodles with a powerful firmness. The noodles are made from buckwheat and wheat flours and kneaded by hand in the restaurant, and many people are shocked when they try them for the first time.
