Popular hand-made soba in Azumino. 4 recommended famous restaurants that are particular about wasabi and ingredients

In Azumino, where water flowing from the Northern Alps waters the wasabi fields and farmland, there are many famous soba restaurants centered around Hotaka Station. Soba made with rich soft water, one of the 100 best waters selected by the Ministry of the Environment, is exquisite. In addition, locally produced wasabi and Shinshu walnuts further enhance the flavorful soba. Here, we will introduce recommended popular restaurants where you can encounter delicious soba prepared with famous water and local specialties.

"Wasabi Flower Bud Zaru Soba"
"Wasabi no Hana-me Zaru"

At "Jiyu-an Asakawa," you can eat hand-made soba using buckwheat flour carefully selected and blended from local, Hokkaido, and Ibaraki prefectures. The popular "Wasabi no Hana-me Zaru" uses the flower buds of wasabi, a specialty of Azumino, as a condiment. It is characterized by a refreshing flavor with mild spiciness. The "Sekka Zaru," which is topped with wasabi flower buds and grated yam, is also recommended. Its appearance reminds one of the Northern Alps mountains in Azumino.

Take a leisurely stroll through the 1,000-tsubo garden while you wait.

Inside the restaurant, you can enjoy your meal while looking out at the garden where seasonal flowers grow.
Many customers visit from outside the prefecture, and there is often a waiting time. Therefore, in the waiting area, there are ways to spend your time meaningfully, such as watching video works of "Azumino Folktales" or admiring the buckwheat fields and wildflowers in the 1,000-tsubo garden on the premises. In addition, original maps of surrounding facilities are distributed, so you can go sightseeing while waiting.
Since the soba ends as soon as it runs out, an early visit is recommended.

"Zaru Soba - White"
"Zaru Soba - White"

Located on the high ground on the east side of the Takase River is "Azumino Okina." The handmade soba, crafted from buckwheat flour stone-milled in-house from a blend of buckwheat purchased directly from farmers in Hokkaido, Ibaraki, and Nagano, is exceptional in taste, texture, and aroma. This is all thanks to the master's skill, as he is a disciple of Kunihiro Takahashi, a "soba master" who has produced many prestigious soba restaurants.
The dipping sauce, like the soba, uses underflow water from the Northern Alps. It features a slightly rich flavor, combining a savory dashi made from Kagoshima-produced dried bonito flakes, Hokkaido kelp, and Izu-produced dried shiitake mushrooms with a tare made from soy sauce from Okubo Brewery in Matsumoto. This robust sauce further enhances the delicate soba.
We recommend the simple "Zaru Soba." The "Kamo Seiro," where cold soba is enjoyed with a hot dipping sauce, is also exquisite.

The view typical of Azumino is also part of the feast.

Because it is located on high ground, the large windows in the restaurant offer a view of the Northern Alps mountain range and the rural landscape spreading out at the foot of the mountains. The area around the restaurant is a park, where you can enjoy scenery colored by the four seasons, such as cherry blossoms in the spring and autumn leaves in the fall.
While it is primarily a Zaru Soba restaurant, they also serve "Kake Soba" and "Kamo Nanban" during the winter.

"Oshibori Soba"
"Oshibori Soba"

This is a restaurant famous for "Oshibori Soba," a local flavor passed down since the Edo period. Since opening in 1997, it has been loved by the locals. "Oshibori Soba" is enjoyed with a dipping sauce made by adding miso to the juice of the spicy Nezumi daikon radish, a specialty of Nagano Prefecture. At "Kamijo," you can enjoy it with firm, handmade soba kneaded with underground water from Azumino and buckwheat flour stone-milled from buckwheat grown at the foot of the Shinshu Yatsugatake Mountains. The pleasant, sharp spiciness coats the soba for an exquisite taste.
Also popular is the "Tenkei Soba," which is topped with 10 different ingredients, including small shrimp tempura, smoked duck, and a hot spring egg. It is a dish the owner created through trial and error to find "ingredients that go well with soba."
Both "Oshibori Soba" and "Tenkei Soba" come with "Mizu Soba," which allows you to directly experience the flavor of the buckwheat, letting you rediscover the deliciousness of the restaurant's soba.

The gallery displays landscape photos capturing beautiful, moving moments encountered in daily life while based in Azumino for many years. Through these photos, you can rediscover the charms of Nagano Prefecture that you wouldn't know from sightseeing alone.
Also, since the owner was originally a French chef, Western-style desserts such as apple pie and vanilla ice cream (topped with fried buckwheat kernels) are also offered. The apple pie is available for takeout.

"Alps Wasabi Soba"
"Alps Wasabi Soba"

A famous soba restaurant located just a short distance from Hotaka Station. Currently, the second generation is at the helm. To maximize the delicate aroma of the soba, the water used for the stone-ground buckwheat flour is groundwater that maintains a constant temperature all year round. By chilling the soba with water that is not too cold, the noodles are finished with an outstanding texture and flavor.
A popular menu item is the "Alps Wasabi Soba." It is topped with "wasabi stem pickles," a local specialty, and the sharp spiciness adds an accent to the smooth-textured soba. Also popular is the "Ikkyu Set," a menu that allows you to fully enjoy local flavors, consisting of a set of soba, pickles, soba-karinto (fried buckwheat dough snack), and a mini salmon bowl.

The interior is unified in a folk-art style.

The interior, with its impressive large beams, is filled with local character, decorated with calligraphy works received from acquaintances, as well as unique animal horns and beehives. You can spend a peaceful time in a space that evokes a sense of nostalgia, with spacious tatami seating, tables made from large single planks of wood, and an irori (sunken hearth). You can enjoy the unique "hospitality" of "Ikkyuan" in both its soba and its atmosphere.
