The main restaurant is located in Hakodate and specializes in fresh sea urchins, which are available throughout the year from Hokkaido and neighboring waters. Along with the standard raw sea urchin bowl, the "sea urchin gratin" is also popular. Hokkaido potatoes are cut into small pieces and topped with a special white sauce made by combining onions that have been sauteed until candy-colored. The white sauce is kneaded with sea urchin and snow crab, so just one bite will fill your mouth with the rich flavor of seafood. The hokuhoku potato adds a textural accent to the dish.

The company is particular about the freshness and taste of the sea urchin, and uses only additive-free sea urchin without any alum, which is commonly used for sea urchin. We peel the sea urchins in our own factory to prevent them from losing their freshness, and send them directly to the restaurant every morning.
The type of sea urchin used is either the Kitamura-Saki sea urchin or the Ezo-Bahoon sea urchin. From June to August, the sea urchins are from the coast of the Sea of Japan, including Rishiri Island and Rebun Island, and from October to April, the sea urchins are from southern Hokkaido around Hakodate and the four northern islands. This restaurant in the suburbs of Sapporo is popular for its cheese fondue. The fondue cheese is original, combining raclette cheese from the Kyodo Gakusya in the Tokachi region of Hokkaido with several types of Danish and Swiss cheese. There are eight kinds of ingredients, including baguettes, seasonal vegetables such as Brussels sprouts, boiled shrimp, scallops, Hokkaido pork bacon, salami, and even a unique kind of yokan (bean jelly). The restaurant began offering this dish because it was inspired by the combination of azuki beans and dairy products. The sweetness of the yokan and the saltiness of the cheese balance each other well, making this a must-try dish.

Dinner is a course meal only, with a choice of seven courses. The popular cheese fondue is included in all courses, as well as steamed and grilled live abalone, Hokkaido beef steak, and other Hokkaido meat and fish dishes.

The night view of Sapporo below is especially spectacular at night! The counter seats by the window are the best seats to dine while gazing at the night view spread out before your eyes, so reservations are a must.

The restaurant offers original and creative gyoza and yakisoba noodles. The dough for gyoza and noodles is made from flour produced in Ebetsu City, Hokkaido, and the dough and noodles are made in the restaurant. Gyoza bean paste is made with many ingredients rarely used in ordinary gyoza. The "Gyoza with Jibier, Beets and Dried Tomatoes," made with Ezo deer meat, has a spicy, mature taste with a hint of cumin. The "Beef tongue with kujo-negi grilled gyoza" is well seasoned and tastes great on its own, but you can also dip it in vinegar with sansho (Japanese pepper) or homemade white powdered raayu (Chinese chili oil) for a different flavor.

The restaurant's main dish is a variety of creative gyoza made with beef tongue, Ezo deer meat, duck, lamb, scallops, oysters, etc. The homemade yakisoba with handmade fresh noodles is also excellent. The yakisoba with blue cheese and walnut miso is like carbonara and goes perfectly with wine. The yakisoba noodles with homemade hot and spicy sauce is a must-try dish that will make your beer go down a notch. After enjoying several kinds of gyoza, we recommend finishing with a unique yakisoba dish.

This Italian restaurant in the center of Sapporo makes the most of Hokkaido ingredients. The owner personally visits producers throughout Hokkaido to purchase quality ingredients, and uses the skills he honed through his training in Italy to create a variety of dishes. A popular menu item is "pasta with blue crab in tomato sauce. It uses original fresh pasta noodles made from flour produced at a farm in Ebetsu City and blue crab mainly from southern Hokkaido. The tomato sauce, which is infused with the umami of blue crab, is well mixed with the chewy noodles, giving it an exquisite taste.

Located in the Maruyama district of Sapporo City, this Japanese restaurant makes the most of Hokkaido's seasonal ingredients. The menu consists of only one omakase course, which is prepared according to the ingredients of the day, including fish and meat, with a focus on seasonal vegetables produced in Hokkaido. The number of dishes generally ranges from 8 to 10. In winter, root vegetables are the main ingredients, in early spring, wild vegetables and asparagus, and in summer and fall, a variety of vegetables are available. The dishes are served with seafood landed at Okushiri Island and Sutsu Port, as well as pork from all over Hokkaido.

You can also enjoy rare ingredients from Okushiri Island.

Since the owner is from Okushiri Island, the restaurant uses many ingredients from Okushiri Island that are rare and scarce even in Hokkaido. For example, the restaurant uses wild vegetables such as butterbur sprouts, asparagus, and gyoja garlic, as well as rice grown on Okushiri Island. In addition, Ezo murasaki sea urchins harvested from sea urchin fishing, which takes place on Okushiri Island for only about a month during the summer, are brought in, so the restaurant offers a special course full of sea urchins from mid-July to early August. The menu includes steamed, grilled, and nabe dishes, recreating the sea urchin dishes the owner enjoyed as a child on the island. Outside of the sea urchin season, diners can enjoy high-end fish such as matsukawa flounder and madai (sea bream) delivered from the port of Sutsu.

Sake is also recommended to go with Japanese cuisine, but here we highly recommend Okushiri wine! We have red, white, and rosé wines from Okushiri Winery on Okushiri Island, which are rarely seen in restaurants, and you can enjoy the marriage of Okushiri ingredients and wine.
