Nikko Jingoro Sembe," popular since its establishment in 1907, is said to have been named after the master craftsman "Saji Jingoro," who carved a "sleeping cat" on the shrine pavilion of Nikko Toshogu Shrine. With a history of more than 70 years since its establishment, Kashiwazaki Shoten is a connoisseur of sansho (Japanese pepper) and a stickler for old-fashioned craftsmanship. 6Ochiai Shoten "Shisomaki Togarashi
Cold-resistant food that warmed the bodies of Nikko's ascetic practitioners
Shiso maki togarashi" has been produced for about 300 years as a cold-resistant food in Shugendo (mountain asceticism), and Ochiai Shoten, established in 1868, continues to make it using the same production method by purchasing shiso and green pepper from contract farmers in the prefecture.
The shiso leaves and green chilies are pickled in salt for one to two years, and when the shiso softens and the green chilies turn tortoiseshell color and become mildly pungent, the green chilies are used as the core and rolled up with the shiso. The beautiful shape of the rolls, which are finished with a pointed tip, is the work of skilled artisans. It can be chopped into small pieces and served on rice, as an ingredient in ochazuke (rice with green chili powder) or natto (fermented soybeans), or added to fried rice or pasta. It is also delicious added to fried rice and pasta. Its tangy and spicy flavor adds an accent to the seasoning.

7"Nikko no kekkozuke" (Nikko pickles)
Famous pickles accented with wine and honey
Nikko's "Kekko-zuke" is made by removing the salt from the raw material once it has been pickled in salt, and then marinating it in a unique sauce made of tamari soy sauce, white wine, and clover honey, which are the two main characteristics of this product. Wine has been used in tamarizuke since the company was founded in 1961, when wine was still not readily available. This was made possible by the fact that Kekko-zuke Honpo also operated a liquor store from that time.
Nikko's natural spring water, "Nikko no kekko-sui," is used to remove the salt.
There are many varieties, including cucumber, ginger, radish, and burdock root, with rakkyo being the most popular. The sweetly flavored rakkyo has a great aroma and is a highly recommended item.

Tamarizuke is a pickles made by marinating vegetables in a seasoning solution made mainly from miso tamari or soy sauce. In the Tochigi region, there was a custom of preserving vegetables by pickling them in miso to survive the cold winters. Tamarizuke" is a pickle that inherited and developed from this custom.
Nikko Miso Tamarizuke is a pickle created by Uesawa Umetaro Shoten. The store, which has been in business for about 400 years, began handling grain, miso, and soy sauce at the same time as the construction of Toshogu Shrine. With the advent of peaceful times after the end of the war, Umeitaro Uesawa, the previous head of the shop, set his sights on creating a local specialty by utilizing his miso and soy sauce making skills. This led him to the discovery of "miso tamari.
Tamari" is the amber-colored liquid that seeps out little by little as miso matures. Nikko Miso Tamarizuke" was created through a process of trial and error using "tamari," which is characterized by its fragrant aroma and rich flavor. In order to preserve the texture and aroma of the ingredients, everything is made using the "unheated" method, and Guest/customers come from far and wide to taste it.
