3Houkaki soba
No chemical seasonings are used! Delicious Okinawa soba made with fresh fish broth!
This Okinawa soba restaurant is run by the owner, who has enjoyed fishing since he was in elementary school. The owner previously worked at a restaurant café operated by an organic honey specialty store, where he used honey in a variety of dishes to create a healthier menu. After working there for about 10 years, the owner decided to start his own restaurant as an original Okinawa soba restaurant.
The restaurant is proud of its soup stock made from Okinawan pork, bonito flakes, kelp, and fresh local fish (akamachi, gara, irabucha, chinu, etc.) without using any chemical seasonings. For noodles, customers can choose between "Terukina Noodle Factory's" curly noodles and original fresh noodles made with whole wheat flour from the prefecture's "Shimamamugi Kanasan" wheat.
Okinawa soba shop where you can also purchase a "Sabani," an old-fashioned wooden boat
Both types of noodles go well with the soup, but the original fresh noodles are popular for their chewy texture and wheat aroma. There are two types of Okinawa soba: "Hogeki Soba" and "Umikaze Soba," which does not use any meat broth and is filled with the aroma of the ocean. The soup is made from fresh local fish, bonito, and kelp, with the flavor of fresh clams added to the broth.
The restaurant's name "Houkakeki (hanging scroll)" was named after "Houkake Sabani (a sailboat)," and Houkakeki Soba is also an agent for Yoshida Sabani Shipbuilding, which is run by an acquaintance who lives on Ishigaki Island.

5Kinchichi soba
Homemade noodles kneaded with Okinawan whole wheat flour are the pride of the restaurant!
Located near the roadside station "Kinabansho," this restaurant specializes in Okinawan soba. You can taste the rare homemade noodles made of Okinawa's "Shimamugi Kanasan" whole wheat flour kneaded into the dough. Whole wheat flour is rich in dietary fiber, minerals, and vitamins, and has been attracting more attention in these days of heightened health consciousness.
Recommended is the "Kingetsu Soba," after which the restaurant is named. It is topped with three pieces of meat and thick fried tofu, and comes with seared cartilage soki as an optional garnish. The soup is bonito broth. The noodles are thick, uneven, and curled, with a smooth, chewy texture and a pleasant slurping sensation.

In addition to the Yomitan Main Store, Kinzuki Soba also has the "Kokusai-dori Mutsumi Shokudo" and "Onna" branches, but the "Tantan-soba" and "Fava Bean Miso Vegetable Soba" are limited to the Main Store menu. The mildly spicy Tantan-soba with thick sesame broth and the black sesame flavored Soramame Miso Vegetable Soba using Yomitan Village's specialty "Soramame Miso" are especially popular among local repeat customers.
A cup served in Yachimun gives a sense of warmth and exceptional flavor. There is also a "Home de Kinchichi Soba" that you can take home in a frozen packet, so why not buy it on the last day of your trip and enjoy Kinchichi Soba at home?
