A night to fall in love with sake in Kanazawa, a city of gourmet food. Five izakaya where you can enjoy the cuisine and the local sake.
Kanazawa in Ishikawa Prefecture is known for its sake. Dotted with numerous izakaya (Japanese-style pubs) that focus on sake, you can experience the profound charm of local sake along with seasonal dishes designed to be paired with sake.
In this issue, we have carefully selected some of the best izakaya for those who love sake as well as those who want to learn more about sake. Especially for beginners, the knowledgeable Staff/staff members will help you choose the sake that best suits your tastes. The experience of finding your favorite sake by comparing different sakes and trying different combinations with food will be a wonderful memory of your trip.
Why do we recommend sake in Kanazawa?
Ishikawa Prefecture has long been known as a treasure house of fine sake, blessed with clean water, high-quality rice, and a climate conducive to sake brewing, including water from Mt. The friendly competition among toji (master brewers) for their skills may be one of the reasons why Ishikawa is a famous sake brewing area. In addition, Kaga cuisine, which is a registered intangible cultural asset of Japan, has taken root in the area, and many sake products complement the delicate flavors of the cuisine.
Many of the izakaya that focus on sake in Kanazawa have deep ties with the breweries and are familiar with the different qualities of sake and the background of the breweries. This makes it highly likely that you will be able to find a rare sake drink, such as a limited edition sake or a freshly squeezed sake only available at that time of the year.
1Sake & Shokuyujin Minato
Taste the exquisite marriage of local ingredients and sake!
At Izakaya, you can enjoy pairing seasonal seafood and other dishes with carefully selected sake. Only first-class seafood is purchased by our trusted brokers, who are the connoisseurs at the market every morning. Many of the sake selections gently accompany the food, and it is possible to ask the owner to suggest the perfect combination with the dish you have ordered, for example, "a sour sake to refresh the palate of a dish with a strong oiliness.
In addition to the seafood menu, the restaurant's hidden specialty is the "Jamaican Chicken," a dish richly flavored with spices and herbs, which is a recreation of the unforgettable taste the owner encountered in Jamaica during his travels there. The spicy flavor is well known for making drinks go down a treat.
Intoxicated by the love for Ishikawa's sake breweries and the meticulous attention to detail
The restaurant's lineup includes only sake from breweries whose sake brewing philosophy the owner shares and feels passionate about. As a show of support, we actively handle sake from Noto, and we also offer rare brands that sake lovers will love. The thoughtfulness of serving daiginjo and junmai sake in glasses that match their individual characteristics is also a nice touch.
The at-home atmosphere makes it comfortable for women to drop in alone. The restaurant's heartfelt hospitality, based on the creed of "taking things for granted with care," is sure to put your heart at ease.

2Ukigusa
An adult's hideout where you can spend a quiet and delicious time
Located a short distance from the bustle of Katamachi, this restaurant is like a hideaway for adults. You can enjoy elaborate and creative Japanese cuisine, with a menu of about 50 dishes, including sashimi, snacks for sake, "obanzai," which are dishes that require a little extra care, and rice to finish off the meal. The owner's sensibility shines through in the dishes, which include unconventional combinations of ingredients.
Each dish is served in a portion the size of a kaiseki dish, so customers can enjoy as much or as little as they like. The restaurant also offers omakase, a custom-made menu based on your request, such as "I want to eat local seasonal vegetables.
A special experience created by rare Japanese sake and the owner's attention to detail
The owner is proud of his unique selection of sake, which he says he often selects based on the rice used to make the sake. In addition to comparing different rice varieties, you can also experience the rare experience of comparing sakes that have been aged on the premises with those that have not. We are increasing the number of "one drink you can't drink without coming here," and once you discover how interesting it is, it is sure to open the door to a new interest in sake.
Many repeat customers come back to the restaurant because they can slowly immerse themselves in sake and gastronomy in a relaxed atmosphere. It is the perfect place to enjoy a quiet evening on a trip.

While many stores are closed on Sundays, it is nice to know that they are open on Sundays as well. The "Japanese-style ramen," a finishing dish that began at the request of a customer, goes well with sake and is popular as a snack.

Fresh seafood delivered daily from Noto and locally brewed sake for a mouth-watering experience
Located within walking distance from Kanazawa Station, this popular restaurant is run by a couple from Noto Town and Kanazawa City. The main attraction is the fresh seafood, mainly whitefish, shipped daily directly from Noto Town's Ushitsu Port. The seafood is shipped in the morning and arrives in the evening of the same day, ensuring its freshness.
Udezu Port lands a wide variety of fish. The menu changes daily as the catch varies from day to day, and rare local fish that are rarely distributed may appear on the menu. Sashimi, of course, is served boiled, grilled, or otherwise prepared in a way that suits the ingredients. We also focus on Noto beef, Noto pork, and other Noto ingredients.
Discover the charm of Noto with our delicious fish and sake.
Since its opening in 2009, the restaurant has been offering a selection of Hokuriku sake, mainly Noto brands, in order to "support sake from Okunoto. In particular, the restaurant has a close relationship with Udezu's "Kazuma Sake Brewery," and before the Noto Peninsula earthquake, it also offered "Yumeri," an original sake blend bearing the restaurant's name. As the proprietress, who is in charge of sake selection, says, "Sake from Noto goes well with fish from Noto.
At this restaurant, you can enjoy Noto's rich bounty to your heart's content while still being in Kanazawa. We hope you will spend a moment experiencing the charms of Noto with our recommended local sake.

A sake comparison set that allows customers to taste a little bit of three different types of sake is also popular (about 1 gou of sake for 3 cups). There are no special sake items, and you are free to choose any of the sake you like. This is a good chance to try any brand you are interested in.

The Higashi Chaya-gai area is less crowded at night, and the store closes early, but a stroll through the teahouse district at dusk in a tipsy mood is also very tasteful. The restaurant also offers a reasonably priced daily lunch, and of course, you can use the restaurant just for a meal.
