About 12 years ago, this was the first restaurant to offer "on-the-spot" tasting, a style that had never existed in Omimachi Market before. The restaurant offers fresh seafood such as snow crabs, kobako crabs, raw oysters, and gas shrimps, with absolute confidence in the taste, origin, and food safety. The seafood on display varies depending on the season, but all can be selected and eaten on the spot. The fresh oysters purchased from the most delicious places at the time are a gem, packed with rich flavor. The sea urchin from Hokkaido is melt-in-your-mouth sweet. The best local gas prawns, with their plumpness, elasticity, and sweetness, are a must-try when you see them. Boiled crabs are also available here by the cupful.

The most conspicuous item in the queue at Omimachi Market is the market's famous croquettes. Originally, traditional croquettes were sold as one of the side dishes, but when the market opened a booth at a product exhibition, the idea of creating a taste unique to Kanazawa was born, and seafood croquettes were born. The most popular item is the "Amaebi Croquette," which is made by adding sweet shrimp and boiled egg to mashed potatoes and deep frying them in a light batter. Each croquette contains two or three sweet shrimp, which is a luxury. In addition, there are many other variations such as the "Kani Croquette" filled with crab meat and the creamy "Amaebi Cream Croquette. They are so popular that some people buy them in bulk as souvenirs.

Fruits Sakano was established about 70 years ago as a banana specialty store. Today, the shop offers a wide variety of carefully selected bananas and other seasonal fruits. Large strawberries, melons, pineapples, watermelons, and other cut fruits are available for eating on the spot. The third-generation owner says, "It's nice to be able to see people's reactions to the sweetness and deliciousness of the fruit right in front of them. The orange juice with a straw inserted into a hollowed-out orange is made from two freshly squeezed oranges. The refreshing, fresh juice quenches your thirst.

Founded in 1980 (Showa 55), this was the first store in Kanazawa to produce and sell yuba. Every morning in the back of the store, you can see the yuba being made from homemade soy milk, and freshly made smooth yuba is on display in the store. In addition, the store offers a wide variety of products made from domestic soybeans, including tofu, thinly fried tofu, thickly fried tofu, and ganmono, as well as a variety of prepared foods that can be eaten on the spot. The standard "okara manju" (bean curd bun) has a gentle taste and is perfect for a quick snack. The "Kushi Yuba" (skewered yuba), available only on Fridays and Saturdays, is light in texture and fluffy on the inside. Cheese Kushi Yuba," a deep-fried yuba skewer with cheese inside, is also available. Drinks such as soy milk amazake and caramel soy latte are also popular.

Founded in 1940, Oguchi Suisan boasts the largest sales floor area in "Omimachi Ichiba. The fresh fish corner, salted and dried fish corner, meat and sashimi corner, fish paste and kelp products corner, etc., offer a wide variety of products centering on fresh fish caught in the waters around Ishikawa, Toyama, and Fukui prefectures. The highlight is the "Yakiyaki Corner," where you can easily enjoy grilled seafood skewers. Local surume-ika (Japanese common squid), mongo squid, nodoguro (sea urchin), shrimp, shellfish, etc., all caught at Kanazawa Port are grilled right in front of your eyes, making it hard to decide which to try. The restaurant was started in response to customers who asked, "Where should I go to eat seafood at the market?" This is the answer to the question, "Where should I go to eat seafood at the market? To make it easy for customers to enjoy delicious, fresh seafood, the restaurant offers a la carte seasonal dishes such as raw oysters, seasonal sashimi, seafood rice bowls, and homemade fried oysters. Kanazawa Oden, a specialty of Kanazawa, is oden with unique ingredients such as fu (wheat gluten), bai clam, and red rolled fish paste, served in a refined broth. Ippuku Yokocho is an eat-in space consisting of three restaurants: Ippukuya, which serves Kanazawa oden made with ingredients from the Omemachi Market; Nanafukumaru, which offers fresh sashimi, sushi, and hamayaki; and Rokkaku, which offers a selection of Hokuriku local sake. The restaurants are crowded every day from morning to evening, as customers can order their favorite menu items and enjoy them in the comfort of their own seats. The restaurant offers more than 50 kinds of locally brewed sake, and the self-serve heating system is a fun and popular feature.
