A standing sushi counter attached to a seafood brokerage company's directly managed restaurant is gaining popularity. Orders are placed using a touch panel that supports four languages, but the sushi is made by a professional chef right in front of you. The attraction is that you can casually enjoy fresh seafood purchased at the market by a discerning broker and brought in every morning.
The sushi is served with red or white vinegar depending on the type of fish, and soy sauce that matches the type of fish is applied in advance. In addition to local delicacies such as hairy crabs, hakkaku (whitefish), kinki, matsukawa flounder, and, if you are lucky, the rare grape shrimp and the so called "phantom salmon," Keiji salmon.

After picking up sushi, you can choose your souvenirs!

Shima no Hito" carries carefully selected seafood from Hokkaido, including Rebun Island, Japan's northernmost remote island. There are two stores in the airport: a souvenir store in Shopping World on the 2nd floor of the domestic terminal building, and an eat-in store in the gate lounge inside the boarding area (near JAL gate 12).
For departing passengers, we recommend the Kaisen-don (seafood bowl) at the gate lounge store. You can enjoy seasonal seafood such as melt-in-your-mouth raw sea urchin without any alum, and salmon roe in Rishiri kelp broth soy sauce. Hokkaido sake and Rebun Island craft beer are also available, and if you are short on time before your flight, there are boxed lunches available for in-flight consumption.

Excellent soup made by boiling the heads of amaebi (sweet shrimp)

 Ebi shio
Ebi shio" (shrimp flavor) as it is, 780 yen

On the third floor of the airport's domestic flight, among the ramen stores lining the "Hokkaido Ramen Dojo," there is always a long line of customers waiting to try this popular store. As the name "Ebi Soba" suggests, the soup is made by slowly simmering the heads of sweet shrimp, and is unique to this restaurant.
There are two types to choose from: "as is," which allows you to enjoy the flavor of the shrimp straight from the shrimp, and "ajiwai," which is a blend of tonkotsu (pork bone) soup. Both of them allow you to enjoy the flavor and deliciousness of the shrimp with just one sip. The toppings include crunchy tenkasu, which is deep-fried shrimp flavored red ginger kneaded into the batter, and shrimp powder to accentuate the flavor.

The one and only taste of sweet shrimp aroma and flavor spreads

 Ebiobigiri
Ebiobigiri" cooked in shrimp soup: 160 yen. Some people put it in ramen soup and eat it like rice gruel.

Hakodate's salt, Sapporo's miso, and Asahikawa's soy sauce are well-known as the standard ramen in Hokkaido, but EBISOBA ICHIGEN is unique in its flavor. If you like ramen, it is worth tasting at least once.
Two types of ramen are especially popular: the light "EBISHIO" as it is and the Hokkaido-style "EBIMISO" AJIWAI. The thick, straight noodles are intertwined with the rich soup and taste exquisite. The restaurant is often fully booked throughout the day, so the best time to visit is when the restaurant opens or near last orders.

Local Guide Comment
It is a must for shrimp lovers. There are two types of noodles to choose from: extra-thick or thin. The extra-thick noodles have a chewy texture, while the thin noodles have a good thirst-quenching effect.
