Cheese and cheesecake are the best souvenirs from Nasu Kogen
Dairy farming is thriving in the Nasu Highlands area. The area boasts the second largest production of raw milk in Japan after Hokkaido. Dairy products made from raw milk of cows and goats raised freely in the magnificent nature are a must-try when you visit Nasu Highlands. We would like to introduce you to some stores where you can enjoy "cheese," one of the most fascinating dairy products in the world.
1Amatani Cheese Factory
Japanese-style cheese souvenirs encountered in Nasu's natural surroundings
Flavorful cheese made with milk from farms in Nasu Highlands. We wanted people to try cheese in other combinations than the usual "wine goes with cheese," so we created Japanese-style arrangements such as tamari-zuke and burrata with miso, which are delicious as snacks with sake and beer.
The store was started because the owner's father was involved in brewing soy sauce and miso. At first, they sold their products at the eaves of their house, but the number of customers gradually began to increase, and they decided to set up a store.
Fresh Mozzarella" (about 150g) 740 yen, "Mozzarella Cheese in Tamari" (about 100-150g) 650 yen.
Shelf life] "Fresh Mozzarella": 10 days from the date of manufacture, "Mozzarella Cheese in Tamari": 2 weeks from the date of manufacture
Discover a new way to eat cheese!
The owner says, "I want customers to expand the possibilities of cheese themselves. For example, if you try "Tamarizuke Mozzarella Cheese" and discover the delicious combination of cheese and soy sauce, we want you to try it at home. Try drizzling soy sauce over "Sumishiro Fresh Cheese," or combining it with miso paste, or even using it as a snack with beer instead of wine. The tastes you encounter here will help you find a new marriage of cheese and food that is not bound by stereotypes.

3Morino Farm
Delicious as is or baked. Cachocavallo made using traditional methods
The ranch raises Jersey cows on pastureland in the forest in the northern part of Nasu Town, and even manufactures dairy products. All of their products can be purchased at the café located at the entrance to the farm. The cheese named "Fukuburo from the forest" is a round and round caciocavallo. The cheese is made by cheesemakers using traditional methods according to the composition and quality of Jersey milk, which changes slightly with the seasons. It has a moist texture and is not too fussy, making it ideal as a snack on its own, but if you cut it into thicker slices and grill it lightly, it melts into a savory, melty, and exquisitely delicious cheese. Sold in a box, they look charming as an egg on a bed of green hay.
Product name and price: "Forestry from the FUKUBUKURO Jersey Cacho Cavallo Cheese" (200g) 1,650 yen.
Shelf life: 50 days from the date of manufacture.
Blessings of Jersey cows raised freely as souvenirs
Milk, which is also used to make cheese, tastes different in each of the four seasons depending on the feed the cows eat, such as grass and hay. Pasteurization preserves the deep, rich flavor, similar to that of raw milk. Butter, yogurt, ice cream, and other products are also available at the café or to take home as souvenirs.
Behind the café is the entrance to the pastureland where Jersey cows live. Walking along the boardwalk, you can watch the cows grazing peacefully in the pastureland, which makes the most of the mountainous terrain, up close. There is also a pond and a handmade swing set in the forest, and the idyllic scenery is a spot that gently soothes the soul.
Product name and price: "Morino-no-milk" 748 yen for a 500 ml bottle, 220 yen for a 90 ml bottle.
Shelf life] One week from the date of manufacture.

4Nasu Kogen Ima Farm Cheese Factory
High-quality cheeses that are highly acclaimed both at home and abroad.
Ima Farm has been involved in dairy farming in Nasu since 1947, and now has a cheese factory on the farm where they also make cheese. The cheese made from the milk of the cows and goats it raises is talked about as exquisite. Among them, the washed cheese "Rindo" is their pride and joy, which won a Bronze at the World Cheese Awards 2019. Many washed cheeses have a strong fermentation smell, but this one is not too peculiar and has a rich flavor. Chausudake and Nasuno are cheeses made by covering the surface with charcoal, which gives them a sour taste and rich milk flavor.
Rindo" (made from cow's milk, approx. 100g) 620 yen, "Nasuno" (made from cow's milk, approx. 80g) 450 yen, "Chausudake" (made from goat's milk, approx. 180g) 2,060 yen
Shelf life] "Rindo": 21 days from the date of manufacture, "Nasuno" and "Chausudake": 28 days from the date of manufacture.
The secret to the delicious taste is the freshness of the milk and careful work.
At Ima Farm, the distance between milking and transport to the factory is kept as short as possible to prevent deterioration of the milk and odor, and at the same time, the fat content is carefully handled to prevent it from being destroyed. This results in a cheese with less odor and the original flavor of the milk. When eating the cheese at home, you can enjoy it as it is, of course, but the salty "Rindo" is also delicious added to pasta sauces or poured over salads. Chausu" and "Nasuno" are also recommended to be paired with deep-roasted or shallow-roasted coffee, tea, white wine, or rosé.
